So why open a brewpub? Besides the economic feasibility (it’s much more difficult to open a craftbrewery), a brewpub gives the brewer the opportunity to brew many types of beers and to create new recipes quite frequently. Craftbreweries, on the other hand, can only have a limited amount of products and the marketing costs and efforts to put a new beer on the market are astronomical. During the winter of 1996, I started taking the first steps into opening the brewpub. I took an accelerated course in business which was very painful and unfortunately, very unproductive. So in September of 1996, enticed by the fun I had during my placement the previous year, I started my Master’s degree in Applied Microbiology at the Armand-Frappier Institute. However, after a few months of work, I understood that the life of a researcher was not mine; I was meant to be brewer.
